I'd love to hear published and hopeful designers talk about designing. And I'd love to hear in-depth conversations with designers about how their design process. Any podcasts out there like that?

Point2point features a lot of designer interviews; however, most of the discussion is player-side ("You'll like my game because") rather than designer-side.

I dunno about non-wargames.

Lewis Pulsifer has started a few threads on his design process, but (to my mind) feedback and response has generally been poor. Certainly feedback had been near non-existant for the few pokes I've made in that direction for my Age of Steam maps.

ObNote: Give me text please not podcasts. Podcasts are a pain in the arse as they're not indexable/seachable and require particular equipment and specially arranged times to listen to. Text can be indexed and searched, and can be read almost anywhere, on-screen or harcopy.

In many of the Board Games with Scott episodes with the designers, there are some segments about the design process for that particular game. I've recently changed the way I do these - the recent one with Shear Panic brothers demonstrates that. I teach the game ('cuz that's what I do) and have the designers talk more about the design and production issues ('cuz that's what they do).

These episodes were:
TTR: Marklin - http://www.boardgameswithscott.com/?p=22
Power Grid - http://www.boardgameswithscott.com/?p=35
Tahuantinsuyu - http://www.boardgameswithscott.com/?p=44
Ad Acta - http://www.boardgameswithscott.com/?p=48
Shear Panic - http://www.boardgameswithscott.com/?p=59

Fear the Boot has been doing a series on designing an RPG, very similar to board games in some respects.

I'd also like to know. As an aspiring designer I've considered that I wouldn't mind doing a Game design podcast, but I'm not sure exactly what the format would be like. I also tend to think it'd be easier and more fun to do a podcast with a pair of people, partly because I don't know if I could keep up with material all by myself.

Edit: also, as I'm not published, i don't know how much weight my observations would carry.
