So after realizing that the target "closet threat" means that people out of line of sight due to obstacles doesn't matter, I began to wonder about the standard "Move & Attack", particularly we were assuming that if the monster can't end it's movement adjacent to its target, it doesn't do its attack. But is that actually the case?

The rule book's core rules are a little unclear on this. It mentions what happens if the monster is already adjacent to its target. (p70)

The prologue rules do specifically say that if the white lion can't reach its target, it moves towards it, faces it, and ends its turn. (p28)

So based on that I assume that any Monster AI attack is a melee attack unless the card specifies otherwise. Can anyone else confirm this?

Yes, all attacks are melee unless specified otherwise (ie, the Kings Man.) If they move and are not adjacent to their target, they do not attack.

Forget the word melee and know that unless specified otherwise a monster must be adjacent to a target to perform an attack.
