Is there any reason not to quickly go around the table and keep doing Intel so that everyone knows their cards and then start playing cards?

Perhaps it just isn't time efficient. Perhaps it still is difficult due to the memory aspect.

(I don't think I'm missing a rule, but I just wanted to make sure.)

You can rearrange the cards in hand, right? Just no looking.

It's not really time efficient. By all means, give it a try if you like.

You are correct, you may rearrange cards in hand, The corners of the card backs are actually different, so you can try to use that to help remember what you know about your hand.
