I was at a group and without access to components to my other games, otherwise I wouldn't have cared. But due to luck of the draw during a four player game, we used TWICE the money in the box.

Yeah this is a problem. What I ended up doing was using cardboard Viticulture coins in Legacy - they visually match - and using metal coins in Viticulture. And there's enough to not run out. But this is not an option for most players who don't have Viticulture with metal coins :/

Cards for money are not good, anyway. I use plastic coins bought from Essen in this game.

Where do people get extra coins for games in general?

I also got rid of the money cards and went with plastic silver and gold coins. You are correct though that there is not enough money in the game.

I've substituted the cardboard money from my copy of Viticulture since I had replaced those with the metal coins from my copy of Tuscany.

I will say, with 2 players, we have never come close to running out of money.

I must admit using the cards for money is unusual, in terms that money is normally used as a token (when there is no need for hidden information).

We played last couple of times with freshly acquired metal Lira coins made by Stonemaier Games, a great enhancement to the game.

It improves your game experience. Recommended.
