Take a picture of your game board at the beginning of every game, end of every game (before clean-up so you can see where diseases were), and maybe even photos during the game at big WOAH moments.
Since the board really does evolve I think this is a great idea. I'm not planning on posting my photos on BGG because I hate giving spoilers, but it's nice to see my board evolve over time.
I took a few pics, but wish I had done it every game.

I saw a post about a campaign log, that would be fun to keep track of too.

I took pictures of every game setup, every major event, every game upgrade, etc. and posted it to Facebook since it was easier there.

Now I have a nice story to look back on when I am curious. Also helps me check up on various rules questions and events for each month.

I had considered buying a camcorder to capture each session, so this doesn't sound crazy to me at all.
