The Risk FAQ describes several interesting variants.

Another cool variant is One World Dominion.

So you played one long Risk game with every variant possible, or you played separate games trying the variants?

Sounds like some serious fun.

Are ther any variants that make Risk more eurogamey (faster play, no elimination, fewer pieces, less reliance on luck)?

You might check out the book "New Rules for Classic Games" by Schmittberger. He gives a 2-player variant where players write down their moves in a Diplomacy-like fashion, with combat resolution entirely dice-less. It looks like more of a variant where you try to outwit your opponent by out-strategerizing your opponent.

One of the best variants I ever found was History of the World!
