Suppose you loved Carcassonne and its expansions, but for variety's sake, you wanted a non-Carcassonne game that might scratch the same itch.

That is, a game that...

...is tile-laying
...plays tiles to a common, central area rather than each player playing tiles to his/her own personal tableau area
...is a mix of luck and strategy
...results in a visually attractive creation (the landscape that results in Carcassonne being one example of a visually attractive creation)
...is fairly easy to learn and play

Ideas?

My solution would be Fjords but it's hard to come by. Other people I know will suggest Cacao.

Other options Palmyra, Wooly Bully, Crows
You could also give Expedition: Northwest Passage a try!

This might not be exactly on the mark, but have you tried Tsuro of the Seas? It's tile laying, and the entire game is gorgeous. The tiles are paths in the sea and there are dragons moving around eating stuff.

maybe Lanterns: The Harvest Festival

also, I recently bought Carcassonne: South Seas and I think it's a nice addition my collection. Yes, it's carcassonne, but ,to us, it's different enough to keep and pull out occasionally.

I'd also suggest some of the Carcassonne variants. I like the original Carcassonne a lot, and when that started to get old I found that I liked to play the stand-alone variants more than adding expansions to the original game. My favorites are South Seas, Gold Rush, and Hunters and Gatherers. I also like Carcassonne The City, but it is OOP and $100 on ebay.

Galaxy of Trian is a sci-fi Carcassonne if you like that theme/setting. Only played it once so far but it was a fun game. There's a couple of things that are different; for example you can see one side of the tile while it is in the pool but not the other so you can base your decision on what you can see or take a gamble on what the flip side might have. The final scoring is a little wonky though IMHO, not sure we got everything right, but I'm looking forward to playing it again some time.

Isle of Skye: From Chieftain to King and Carcassonne: The Castle. This Carcassonne adds a brand new look, a wall you MUST build inside and a scoring track along the outside that gives you bonuses and such. It definitely feels like Carcassonne, but redone.

+1 for Isle of Skye.

Players do create their own tableau, rather than a collective one, but I highly recommend it for scratching that itch. It's the perfect mix of different and same to Carcassonne to add to your collection.

Amazing Space Venture is a space exploration game with quite a few mechanics similar to those in Carc. Maybe not the most visually appealing game, but it fits your other criterion.

Between Two Cities is a small tile-laying game with a city being built between each two players, so for a larger group (up to 7), it could work...

Part of the AEG tempest line, a tile laying game where you lay buildings and canals down to activate the buildings and earn points. Buildings score differently based on the buildings next to them. Also every card can be used to lay tiles, or as a "scheme" (other generic action). Provides good tension: do I want the building to score points or that awesome scheme that lets me do X?

I can't help it either. Carcassonne: Hunters and Gatherers is awesome and Carcassonne: The Castle is great for 2-player.

I didn't love Cacao at all. We sold it pretty fast. It feels more like a worker placement game than a route or area building game.

Ingenious maybe?

I'm actually picking up Isle of Skye off someone tonight. I also love Alhambra but you would be missing requirement 2.
