My family and I enjoy playing RotRL and have all the adventure packs for it plus starting to get into SaS. Been thinking about getting some of the class decks for the new characters and cards but not sure which would give the most new cards that are not in either RotRL or SaS, looking at either Monk or Paladin at the moment.

The best way to do that would be getting theclass decks from wrath of the righteous which are coming out. An important thing to note about the class decks is that some of them deal with specifics from the main box they are from. For example, the Alchemist deals a lot with firearms, something not present in Runelords.

I have the Wizard, Cleric, and Paladin class decks and enjoy them immensely. They add some great new heroes and new cards to the game. I think each one cones with about 20 new cards and the rest are repeats of what you see in the base game they come from.

That is 42 for the Monk deck and 59 for the Paladin deck. Some of the Monk stuff if really different though, especially the weapons (i.e. letting you use Acrobatics for the weapons). Both are great, at least in my opinion.

My wife and I just started playing a 2 player game of this, curious if I should order the 2 character decks for our characters? Is it worth it?

She is lini and I am the fighter guy.

In my opinion, the fighter deck has a few interesting cards but the druid deck has a lot more cards that are maybe worth getting.

You are welcome. I think the issue for Paizo is, there are too many possible iterations of the question you asked. For example, what if you had also owned Wrath of the Righteous? Or what if you already owned the Monk deck and were going to buy the Barbarian? Both those would change how many "new" cards you were getting in each product.

That's true, didn't think of that. What would be good is a spreadsheet where you could enter what sets you had and it would show the unique cards you didn't have from the other sets/packs.
