There are so many possibilities that I'd love some help narrowing the field.

We have and love
Jaipur
Forbidden Island
Fish Cook
Royal Game of Ur
Shut the Box

We have but have not played Citadels and Hanabi

Basic requirements are

very little take that
some to a lot of interaction
small box (say the size of Forbidden Island)
Sets up and plays in less than about 45 minutes, 30 minutes is better, but on the other end needs to last at least 15 - 20 minutes.

and Most Important

Must play extremely well with 2 people.

These all have small boxes and play well with two...

San Juan
Excellent 2 player, not too much take that IMO.

Lost Cities
Exclusively 2 player, some take that (or, rather, "don't take that" because you're withholding cards from your opponent.

Artifacts, Inc.
Fun for 2, not too much take that but a little competitive.

FUSE
Co-op, fun if you like dice.

Biblios
Good with 2, not too mean.

Sushi Go!
Fun and lighthearted, plays fine with 2 but probably better with more.

A 2 player game my wife and I love that I never really see get recommended in these threads is Pagoda. It's a light Euro with no take that but a lot of fun card play. It has a really neat 3D effect as you and your opponent are building actual little pagodas. It's only 15 bucks on Amazon right now too.

Battle Line! From a fellow lover of Jaipur, I actually like this 2-player classic card game just a tad more.

I agree with this but it doesn't matter because both players are destined to do this a number of times and it is expected. Great game, we have s lot of knizia games.

++to the first few recs, especially San Juan. Battle line, 7 Wonders Duel, Magic and Hive have head to head conflict (take that, like Chess), and may not be good fits.

I would add:

Arboretum
Fleet Wharfside
Bear Valley
