One day I was sitting around playing Stormy Seas with my 5 year-old. It's a fun game, but I thought it needed to be a little more epic. Then I pulled up the He's a Pirate track from Pirates of the Caribbean and the awesomeness was oozing.

After that, my wife and I spent a while trying to pair up board games with music that would enhance that theme. Our collection isn't terribly extensive and we haven't completed all that we have, but here's what we have so far.

Feel free to submit your own!

Betrayal at House on the Hill
Candy Land
Fireball Island
Guillotine
Kahuna
Labyrinth
La Strada
Love Letter
Mr. Jack
Settlers of Catan
Stormy Seas
Tiki Topple

Re: Using music to your board game experience more immersive
I tend to turn to my video game music as they do a good job fitting to themes.
also I've looked to others' lists such as:

When we play Mysterium, we love music. Really adds to the atmosphere of speaking with a ghost. We just look on YouTube for 2 hours of creepy music. Pipe organ, harpsichord, baroque era stuff can also work well.

Also, Burgle Bros. definitely merits the Mission Impossible theme.

When playing Scotland Yard, we usually play the theme to "Catch Me If You Can"

Whenever we play Pit we put on Yakkity Sax.

Seriously though, I try and match up music with the theme.

Ghost Stories: I play Chinese instrumental music.
Betrayal at House on the Hill: Dark Ambient sounding instrumental.
Star Wars (insert game here): Star Wars soundtracks.
Any medieval style game: Skyrim, Lord of the Rings, or GoT soundtracks.

When playing solitaire games of Leaving Earth, a trick I learned from someone on the forums there is to pick a hits of 19xx station (the game starts in 1956 and progresses through 1976). This should work for any similarly placed historical game.
