In the Dragon vs Thief (2-player) game, it says to give the Dragon the Ash Dragon card.

Since the Goblin isn't playing, is this just to give the Dragon +1 Armor vs Pickpocket / Backstab?

Correct.

That makes it harder to cripple the dragon with backstabs early on, and makes stealing from it much more difficult in the late game.

Should this apply to Dragon/Thief/Cave games as well? (rules don't say so, but 3-player games just say use 2-player rules + Thief)

Also, should Daring/Eagle-Eyed be removed from Knight/Thief/Cave games? Similar to above, they aren't included in Knight v Cave games, but that's because there's no targets without the Thief/Goblin/Dragon.

With an active Cave player to offset the other two players it's not essential, but if you find the Thief is having too easy of a time, by all means feel free to add it for that combination.

Daring and Eagle-Eyed can both be completed with the Thief as the target, so they remain in the deck.

The Knight will need to find the Enchanted Bow before she can shoot the Thief, however.

That make sense, so you should probably add the clarification in the next version of the Rulebook, as right now it says to use rules from 2-player version (which for Knight vs Cave says to remove them).
