Most games have a sweet spot for either 4, 2 or 5 players. Few are ideal with three.
What are according to you the best games to be played with three or ... which ones have a sweet spot of 3 players?

I think Vikings is best with three - it's really tough to feed your people with two players, and with four, you don't get enough tiles.

Agreed. Very nice game with 3 players, not nearly as fun with 2 or 4.

The best is God's Playground, but good luck finding a copy at a reasonable price.

I like Android best with 3 players. I've heard that Maria is one of the best 3 player games, but I haven't gotten my hands on a copy yet.

Three player only.

This. If you like war games, Forbidden Stars is great with 3. Titan I also like best with 3.

But those are pretty far afield. I imagine there are plenty of good Eoros for 3 too.

Maria is specifically for 3, and certainly a good (hard to classify wargame-ish euro-ish) wargame.

The old wargame Web and Starship is also specifically for 3; I've heard it's good but have never played it.

I know many other games for various ranges of players (i.e. not specifically 3-player) which I think do indeed work great with 3, but I'd be hard pressed to say that they are necessarily best with 3. Maybe Blokus Trigon is the most likely candidate.

Neuland
After the Flood
Carolus Magnus
Web of Power (not sure about the sweet spot for China and Han)
Hansa
The Bridges of Shangri-La

and quite a lot more, actually. Of course most of the above titles are hard to find these days.

Food Chain Magnate is excellent with three - both short-term strategies and long-term work well with this player count. I tend to find it's hard to pull off a short-term strategy with 4 or more.

Through the Ages: A New Story of Civilization is good with three too - not too long so you can play it on a school night, and you get the benefit of pacts etc which you don't get in a two player game.

Churchill got some nice press but I hear that

Triumph & Tragedy

is the better game.

I think it depends on the type of game you're looking for.

To me, T&T is a little too war-gamey for my taste, where Churchill is more Twilight Struggle-ish, so I can get into it more.
