All maps are fine with 2P; but you'll find less direct interaction on the larger ones.

The Spanish map in Salsa is great with two.

It looks like the forthcoming Corsica and Gaul maps will be great for two players also.

I think that the Britannia map, being rather tight, is considered to be especially good with 2; the Germania map, in contrast, is designed for higher player counts.

FWIW my wife and I have been playing 2-player repeatedly on the base game's Italy map and enjoying it greatly.

The original italy map is fine with two. The spain map is great with two. I'm not a huge fan of the britain map but it works as well.

Impromptu ranking of suitability of maps for 2P games:

1) Britannia
2) Hispania
3) Italia
4) Imperium
5) Byzantium
6) Germania

I suspect the upcoming Corsica is designed to go straight into the Number One slot on this list.
