When units pay 7 APs to hide themselves within one hex of their current location per 19.2, it shouldn't matter what kind of terrain is within one hex as long as it is out of enemy LOS, correct?

Yep thats how i read it. Also once hidden, the specific terrain you move into doesn't matter. Instead use +3AP if moving into any cover giving terrain and +6AP if into open terrain.
So its actually better to move between jungle terrains when hidden.

All,

I have never played with hidden movement before. When a unit goes hidden, it sounds like you mark it on a map.

Once that is done, I assume you can move it and remain hidden by adding +3 or +6, correct? Do you just mark on the map and continue moving each turn until he becomes unhidden?

The rules explain how playing with hidden units work. I suggest reading the rules. In fact, page 2 answers your question:

Some Firefights allow hidden units or artillery barrages during
setup. Write down the hex number locations of the hidden
units and artillery targets on a piece of paper.
Note: To simplify this, players can download the free 'Hidden
Movement and Artillery Targeting Maps' from our website at
