How to treat mixed fruits? Do they count as both fruits? Or as one fruit and you decide which one?
And if used as one, how do they work with action 6, draw until double fruits? Can you choose what you want it to be to avoid doubles?

You have to put the double fruits aside until a card instructs you to use them, just like the snakes,...

Correct. The fruit-mix cards will be introduced by a late location card. All necessary rules are then explained in the glossary.

Once the mixed fruits are in play, do they stay in the pile of fruit cards once used, or do we have to remove them after each game (so there's a pile of 10 to pick from each time we start with card 51 in play)?

Fruit mix cards do not stay in the deck for the next game! At the end of a game, remove any fruit-mix cards from the fruit deck and return them all to the pool.
