Has anyone played this with younger children than the 8+ that it is recommended for? I understand you can make it easier by removing some of the cards, is that included in the age limit? My oldest daughter is 5 and I'm on the hunt for games that will be fulfilling for adults while also being playable for kids.

I'd say simply try it out. She'll be able to tell you whether the game worked for her or not.
(I always think cooperative games are an excellent way to get children into games (and complexer mechanics.)

I have played it several times with my 5yrs old. She gets the basis concept but she does need help in deciding which multi use card goes best where. But I think in a year or so, she will be able to play completely on her own.
