I wonder if players could just alternate tile selections, and after a certain number of turns one could end the process by declaring "stop" and/or maybe after a certain number of selections the process would end automatically.

I just don't like the idea of maniacally grabbing tiles and one player ending it arbitrarily. Would the above idea ruin the game?

That is an interesting idea. Have you tried that yet?

I believe the core of the game is the real-time element. Racing to pick tiles typically leads to picking too many or not the correct one and that's where it's fun (for me).

I agree that this is one game where the timer adds to the fun and is a key part of the experience. Having a plan and getting mostly what you want is the goal, but the timer ensures you stay sharp and get your shopping done with focus and a bit of nerve!
