So my understanding is that stances are one time effects that stay on the board until you remove them by trigger or new stance card? The stance effect isn't active each turn it's still out correct like an upkeep skill is?

Correct.
You play a Stance for the one-time effect, and if the trigger is met later you get the trigger effect.
If you play a new Stance or the trigger effect is met, you discard it, but otherwise the Stance sits in play indefinitely.

Can you use that magic icon and discard it or is it "locked" completely until the trigger effect happens?

You can't play a card for magic from "in play" - you can only play it from your hand. Once its down, it is a skill/loot/stance; it can no longer be used as a resource.
