2 examples of euros I like are Fields of Arle and Archipelago. Stuff I don't like is anything by Feld / dry point salads.

Dungeon Petz is a great very thematic Euro.

I've heard lots of people say Legends of Andor is like a Euro co-op or Euro/Ameritrash hybrid.

Nisyros is defenitely a co-op Euro, it's a co-op worker placement game. I got to look at it at a recent convention and it looked quite thematic too, but I didn't actually get to play it.

The only Ameritrash thing about Andor is the fantasy theme. The game is very much a Euro-style optimization puzzle. It's also gorgeous, thematic, challenging, and a lot more variable than most give it credit for. It's my favourite coop game and I highly recommend it.

EDIT: I am surprised that nobody mentioned Flash Point: Fire Rescue yet.

Of course not. But they're also not individual recommendations. Rather, they're based on the ratings of thousands of BGGs, which provide a different perspective. Sure, the OP has to do some searching, but (at least to me) that's part of the fun, and likely to result in a better choice.

Assuming that you count FoA as thematic (I do), then of course you should look at A Feast for Odin, but also check out anything from Vital Lacerda, such as The Gallerist, which ties FoA in favored status for me.
