It's the grey - it starts blank and you shade it in.

The weapons to customize a mech come without shaded parts of their firing arc. I want to play a game with a customize mech but don't know what to do with the firing arcs that are all white. How do I decide their firing arcs?

Colour them in to match the pre-marked sheet, based on the location. Alternately, print the alternate weapons and cut a hole where the (blank) arc is, so you can place it onto the sheet and see the correct arcs.
