We (tried to) play this game for the first time last night, and the Haunt was #72, "Man's Worst Enemy". The dog is transformed into a monster. Does it still move like the dog: follows me around and can run out 6 moves to attack somebody? Or does it move like a monster: roll dice based on its speed and it moves independently of me? If the latter, are we allowed to separate? What if the dog's speed is faster and I can't keep up?

I've not played that haunt, but:

If the dog turns into a monster, then it follows the rules for a monster, and not the rule for the dog.

It will move independently, roll it's speed dice every turn, and move it on it's own. You do not have to move along with the dog, the dog moves in the monster phase, you move in the traitor phase.

Since the dog has turned into a monster it can't be a dog at the same time, so the player who had the dog card would usually discard it, but I assume that would be described in the haunt.
