Since cattle and sheep are red tiles, can I eat them? (I would of course put them on a stick over open fire...) In the rules it says "animal products". If they are dead, they're all meat to me, right?

Note that while it's legal, it's almost certainly non-optimal. You can upgrade animals to green tiles, since they're red, and that gets you some pretty large tiles. They also breed to get you more animals, are worth points on their own, and can be used to get more tiles (milking/shearing actions) unlike any other food. So if you can eat other stuff, it's usually better to.

There's at least one occupation that encourages you to eat animals (gives you a Skin and Bones tile, I believe).
