Any suggested ratio of how many wolf players to total players? Same with good / neutral players. I would expect a suggested chart to be included....

Huh, you'd expect there to be some guidance in the rules. There's been a few threads on BGG over the years, with significant variance between groups:

Some good starting points, IMO:

9P: 2 wolves, 2 specials, 5 villagers
13P: 3 wolves, 3 specials, 7 villagers
17P: 4 wolves, 4 specials, 9 villagers
21P: 5 wolves, 5 specials, 11 villagers
...etc

For in-between numbers, think about switching a wolf for a wolf with a special power, adding in a non-wolf evil, or adding in a lone neutral, depending on what the set has available. To a certain extent you can include more specials if you include more evils or neutrals, but be careful; having too many specials in a known roleset breaks the game, as does having not enough mislynches available because the combined evil numbers are too high.

Adding in a full third faction (vampires in this game) is tricky. Those multiple kills mount up very quickly, and in order for the village to have any chance of winning on their own they need a big initial numbers advantage. Maybe something like:

21P: 2 wolves, 2 vampires, 5 specials, 12 villagers
31P: 3 wolves, 3 vampires, 7 specials, 18 villagers

I adapted these suggestions along with a mechanic for factoring in Vampires into a table that I put at the front of an expanded rulebook for "Wolfed" - it's in the file section
