This regarding collecting coins during the guests step

If you reach capacity to collect 15 coins but you have a staff member that allows you to collect +5 coins per (attraction/sideshow/etc) - do you collect 20 coins?
now with the event card to double - they would get 40 coins?

Short answer, yes.

The capacity only limits you to collecting money associated with 15 guests, but sometimes this limit is raised with extra capacity. Sometimes the amount for each guest is increased (with something like a Sponsorship Deal), and sometimes there is extra on top of that limit such as with the Souvenir Seller and Snack Seller.

The trick to making good money is to make combinations of events: For example: Sponsorship Deal + Celebrity Guest + Media Blitz = crazy amounts of money.

EDIT: The doubling effect of things like the Sponsorship Deal only applies to the income from stars, not the additional bits on top of that.

The way that I describe it to people is that the capacity limits the ticket sales - you can only fit 15 guests in the park if your capacity is 15, so you can only sell 15 tickets.

You can have a park with 25 stars worth of cool stuff, and still only fit 15 guests in it.

The extra coins are more money that you manage to wring out of the guests once they're in the park, by selling them snacks, souvenirs, balloons, special shows, etc.
