For sake of having to, lets say games can be categorized into two groups fun and thinking. Fun being defined as, you're just going through some motions and enjoying yourself without worrying about long term strategy too much. "Quick wins" is my idea here, there's no more than a couple minutes between personal celebrations. I need some more entertaining games! Lets hear some suggestions! Nothing too light, we love the hour mark +
Btw, I love all of my games almost equally and highly recommend any on my list.

Labyrinth should be playable for someone aged 3-4, and my wife certainly thinks it's fun! (It's definitely more Carcassonne than Pandemic, that's for sure.)

Hahah, I know. Turns out Labyrinth is good for 3-4 players, too. It's an adult game, not a kids game, but pretty light/simple.

I've only played the iOS version, but Can't Stop is a streamlined push-your-luck game, which of course, produces some fun moments of excitement when people, uh, push their luck.
"I'm going to roll one more time... okay, one more time... just one more... OHHHH!!!!"
When we're headed out for beers, our go-to game is Skull, which is a streamlined bluffing game.
"Flower... flowerr... flowerrr... SKULL!!!!!"
And lastly, I have a ton of fun playing Pictomania. It is a brilliantly designed drawing game, in my opinion. There is tension between wanting to draw accurately so that others can guess your drawing, but you are simultaneously trying to guess what other people are drawing! And, there are some great 'hard cards' of abstract concepts that are fun to attempt.

I'm making my way through the playthroughs of each of these! Thanks everyone so far, if anyone has more ideas that would help too!!
We're all in our late twenties, if a game is too simple, I could totally see us only playing it once or twice. Definitely looking for something with at least 4-5 plays per game Edit: (per year).

Jamaica Small World Evolution Defenders of the Realm is a little longer than your one hour sweet spot, but the amount of fun easily carries you through the length. Burgle Bros.
