One variant I love to play is to lay the tiles out in a grid with start near one corner and the finish/exit near another. We change the rules so the tiles never move, but can become disconnected from the finish. Once it's disconnected it gets taken away with any remaining player or guard pieces on those tiles getting removed too. Those disconnected tiles and pieces are returned to the box.

We treat Start as a one way door, you can only ever leave and never return to, and exit as a one way door, once you go into it you can never leave, pieces are removed from the board when any part of their movement goes into the exit.

The only other rule we adopted was in any one move you can only visit any one tile once, never more.

The start and exit tiles are each the size of two tiles, in total then you can layout a grid that is 6x6, 4x9, 3x12 or 2x18. My favorite after a few playthroughs is 6x6 with start in the second column touching the top edge and exit in the fourth column touching the bottom edge.
