It can be 2 player only or up to X number of players. It has to be a game that is simple to explain. Last time I ended up buying:
Ticket to Ride (vanilla version)
Last Night on Earth + expansion (This one only because I like zombies LOL)
Patchwork
Jaipur
Agricola (AMAZING game, but too deep for a couples game or to teach other couples)

If the primary criterion is "easy to explain", then I recommend looking at some abstracts like Santorini, Hive Pocket or Ingenious.

Take a look at Fog of Love. It's not out yet, but it's a 2 player game where you play two people in a relationship. Cards present options for you that will drive the story forward in different directions. There are different scenarios, including an in-laws one that you have to survive!

Suburbia : short rules, quick to learn, but is a medium weight game. One of my husband and I's favorite games to play together.

Santorini: Very easy to learn. Can play without the cards to start.

Ginkgopolis: Another quick to learn game that is excellent with 2. It is out of print though.

Some other excellent 2 player games:
Targi
7 Wonders Duel

While out of print, if you can find Agricola: All Creatures Big and Small, it is simpler than Agricola

How would you rank those 5 games that you bought (as couples games)?

Point us to what worked best and *why* (or what did you / the-other-person-in-the-couple like best), and we can build on that.

Honshu you can play in 30 min.
Unfair has a bit longer playing time.

Here you go, pick your poison. I've got three "hipster" choices:

Onitama - "competitive"

...and then we held hands - "cooperative"

Holmes: Sherlock & Mycroft - "euro"

Avenue-are we calling this a 'draw and write' game? Very portable as it's essentially a pad of papers and a small deck of cards.

Clank!-an Ascension-style deckbuilder with a board and a cranky dragon.

Sanssouci-seemingly often overlooked simple, fun, and fairly inexpensive tile-laying game.

Bonus recommendation for Grand Austria Hotel (rec for 2p only). GAH is fairly simple mechanically, but with plenty to consider and good options for combo building.

Sure.

First and foremost, a game for the layman must be easy to understand and to explain to new players. The reason is because one usually dont play every single week. Hence every time you play you have to check the rules again. Is annoying to play few games to far in between and have to constantly check the rules because you forgot.
Second, it has to be easy to explain to people. One may put effort to understand a complex game like Agricola. Other people dont. Its annoying to have to explain every single thing during a game. More annoying if you consider that you are only going to play one game and never again with those people.

If you want to compare it to a videogame, think of Mario Party. Everyone can pick and play and have a chance of actually winning. You want board game like that for the layman.

Ticket to Ride fits these two requisites.
Last Night on Earth not so much. Is not a hard game to understand, but is also not very streamlined.
Patchwork does fit
Jaipur does fit
Agricola is an amazing game. I would not even consider this a party game. People would get headaches. My girlfriend play it only to make me happy lol. If I had a couple of friends willing to put the effort to learn the game, that would be a whole other story.

In order of ease of learning and explaining:

Kingdom Builder
Above and Below
Alhambra

Kingdom Builder and Alhambra both have a whole slew of expansions. I have the Big Boxes of both, and am still playing the base games. That's not to say I'm not looking forward to adding them in; we're just not ready to do it yet.

Arboretum - beautiful, deep, puzzly, set collection and tableau building, plays 2-4
Citadels - simple rules, interesting bluffing, my girlfriend can read me like a book and I always lose, plays 2-8
Carcassonne - classic, cosy, family friendly or can be brutally vicious if you prefer, plays 2-5, or more with expansions.

Eko - because it never gets a mention but is actually really fun. Plays 2-4, abstract strategy game using stacking checkers, some area control elements, variable play set up.

+1 for...
Hive - a must have in my opinion, just great. Travels well, plenty to think about but plays quickly, looks fantastic. I like the big version as well as the pocket one, the tiles are big clacky domino things, very pleasing to handle. Waterproof so you can play it anywhere, from a beach to a pub table.
Morels/Fungi - a good romp, not too taxing on the brain
Takenoko - relaxing and delightful but light on strategy, nice for a weeknight I find
