I taught Sheepshead to my SO and wanted to share the simple variation we picked up to play with 2, each single handed.

-During the deal, using a standard setup "Sheepshead deck", both players are dealt the usual 7 to their hand. Then, 4 cards are dealt unseen face down in front of each player; an additional card is dealt face up atop each of those 4 (each player will have 4 piles of 1 unseen+1 visible card). 2 cards remain, which are placed face down, unseen, and form the blind. Player opposite the dealer has first honor to take the blind and play for tricks. Blind is brought into the hand, and 2 cards of picker's choice are set aside to be scored at end of game only if picker has taken ≥1 trick.

Play as usual.

Picker takes X points/ picker adds: opponent adds
NO tricks / -12:+3
0-30 / -8:+2
31-60/ -4:+1
61-90/ +4:-1
91-120/ +8:-2
ALL tricks: +12:-3

(Note that 120 can be scored w/o taking all tricks, e.g. losing a trick of 7v8 of hearts.)
