When making wine with cards like Laborer, does the generic wine symbol mean that you can even make blushes? or just Red and White?

Yup! The generic wine symbol means any type of wine -- red, white, blush, or sparkling. The only restriction is that you have to have the right cellar(s) for the wine you're making (unless the card says otherwise).

Usually the visitor cards allow you to make any wine, assuming you have the necessary grapes and cellar for it. You're only restricted when it has the colored/shaped icon for a specific wine.
