I read a few posts where someone says that in 6 player games all tiles come out.

In the rulebook, it says to put 10 tiles out. There are 12 tiles in a season.

So are people saying all tiles but really mean almost all tiles?

Could they be meaning Winter tiles? In the 6 player game, you play with 10 Spring tiles, 10 Summer tiles and 10 Autumn but 12 Winter tiles.

all tiles do not come out - particularly if you add in expansions. maybe what the person was trying to say is that in a 6 player game typically tiles that produce nearly all resources come out. generally in 6 player games you don't have a resource that is constrained where that's very common in a 3 player game.

I thought it was weird that people would say all tiles come out.

No, you never run out, but in the base game with 6 players you'll use every tile. The more tiles you add, the more game-setup variety there is. That attribute is less important to me, but yeah Farmers has more.
