I'd like another game that has a weird variety of mechanisms, think something along the lines of Forge War maybe. Something with a good length and complexity is no issue.

I was looking at Virus but am not a fan of real-time games.

Any thoughts?

I see you're already pretty familiar with the What's Your Game? offerings, and several Lacerdas.

Also from Lacerda:
Lisboa
Vinhos

Or:

Dominant Species
1846
Indonesia
Pax series (Pax Renaissance, Pax Pamir, Pax Porfiriana)

Edit:
Trickerion
Anachrony
Argent the Consortium
Millenium Blades

Yeah I have a lot of these. I love Vital Lacerda for his complex games, and Anachrony is definitely on my list. I also probably need to give Argent the Consortium another look.

But I'm mainly looking for stuff that has mechanisms which are just completely unexpected. Like Forge War has your resource management going on, then this weird "mining" minigame that you do to gather the resources.

Kind of hard to explain, I guess.

Feast For Odin
Food Chain Magnate
Terra Mystica
Trajan

Could go longer, but there's a few to start with.

I don't know if I fully understand what you mean by unexpected mechanisms, but maybe check out Bruxelles 1893. (Search seems to be down. Otherwise, I'd link you to it.) I just found that whole game to be oddly adjacent to a typical worker placement.

+1 to that. With the caveat that it really should be played only as a 4p.

Burano has worker placement, area control, city building, and a pyramid action selection thing.
Puerto Rico didn't see this on your owned or previously owned
First Class: All Aboard the Orient Express! lots of triggering and combos

Mombasa - I wasn't a fan of it, but it seems to tick the boxes on your request....

If they're your cup of tea, you might look at 4X games, which are pretty much definitionally required to be mechanically complex.

Here's some length and complexity and absolutely novel mechanics: https://www.boardgamegeek.com/geeklist/208026/guide-gmt-game...

Android uses a weird mix of different mechanics that often feel like mini games.
A Study in Emerald also doesn't fit into any of the usual categories.
