Thinking of trying this out with 7-8 people, and just wondering if everyone will have enough to keep them occupied.

We had 4 people and would not want to add more.

I have played with 4 as well and don't think more would work very well. I think you would have people finding themselves bored and just watching.

We hosted an Escape Room party recently and had a total of 11 people. We simply reset the game for each group (instructions on their site http://www.escaperoominabox.com).

We played with 6. There were a few times when someone didn't have much to do, but for the most part, we were all pretty involved throughout the game.
We've played most of the other Escape Room games, and this one, by far, was the best with a larger group. Also, in our opinion, overall, it's the best one out there so far.
