You put the health at 10. And then raise it according to the seal cards. But how do you do that?

The effect of some seals give Magmaroth something like +5 or +15 health. Increase the health on Magmaroth's health track by that amount.
If you haven't drawn any of these seals then Magmaroth only has 10 health.

WHEN does this happen - I asume when you enter his cave the +15 will be added, so if you destroy the seal beforehand, he will not get the +15 bonus.

Now what happens, if you enter the cave, he gets +15 and in one of the cave fighting rounds, you destroy the +15 seals? No effect (as he already got the benefit and does not loose it) or -15 because he does not have the +15 bonus any longer?

And, I think, he get-15 when breaking the seal being in the cave.

This. As soon as you break the seal, subtract 15 health points from Magmaroth.

Breaking the Seal is effectively like dealing 15 damage to him.
