A common trick is to use the same total of points for each monster. For example, if you only had 5 categories and spent 15 points, you could average 3 in each category (3,3,3,3,3), but if you wanted one monster to be strong in one category, it would have to be weaker in others (5,1,3,3,3 or 5,2,2,3,3). With 12 categories, I think it would be easiest to start with 30 points (six 3 point and six 2 point categories). I think the slightly lower average would limit the use of 5 points, making them seem rare and unique.
