Would it work for more players to just combine two copies? I could add cards from various expansions, but those might add some of the more complicated aspects (death, etc.), and I like the idea of the simpler play in this set.

We haven't tested this with two copies and I wouldn't advise it; many of the cards are written with the idea that they are unique in your game, and they could break things in "interesting" ways if you double up on them. (Hoard comes to mind immediately...)
