Subject: Passionfruit rss

My passionfruit finally got going this year - grew a heap, and has fruited a heap. I have a bucket of fruit just from windfall alone, and perhaps as much again still ripening on the vine. Next year it'll have better trellis, so I expect more fruit again.

What should I do with them? I have the time and equipment (and budget for any equipment I lack) I'll need, and no fear of experimentation.

I don't have access to buttloads of fresh passionfruit, so I recently bought a 5 gallon bag of passionfruit puree. I intend to eventually referment it on a sour beer (aka mixed culture).

But first I did boysenberry puree



on 12 gallons of my base sour beer.

After that comes black currants on my Russian Imperial Stout sour beer.

A RIS is a very dark and roasty beer. Adding a sour/funky component makes it fucking awesome IMHO. And adding fruit on top of that will only make it better. Raspberries work really well. I'm trying currants.
