If I understand correctly, the second edition of GP gives me the updated rules (with consistent modifiers - such as positive always good, negative always bad) but I already have that from SE remastered rulebook. So other than that, if I get GP first edition the only improvements I’m missing out on are the stronger box and the mounted maps, or am I giving up other improvements too?

This is correct. Ghost Panzer already had the proficiency system; Screaming Eagles 1st edition did not have it.

I guess you're including the player aid in the rulebook, but just to be clear: AFAIK the player aid got some tweaks/improvements in wording too.
