We are new to the game and have run through the starting mission a few times to get used to the rules. We finally made it to the end location and the finally show down. There were no growing dread cards so we pulled a High Three card and began the final encounter.
Question is, the rules say to roll for the Holding Back the Darkness at the beginning of each turn, so if the darkness reaches a Growing Dread marker what happens? Do we ignore them now that the final encounter has begun? Similarly do we also ignore the blood spatter markers too?

No, you don't ignore either of them - Growing Dread cards are immediately revealed (you may still counter their effect by paying 1 Grit each) and Darkness cards immediately add their effect to the final fight.

So you might want to finish this fight as soon as possible as it tends to get nastier over time...

Nasty? Our finally battle was super nasty. We played just two heroes so we drew a High Level Threat for the end fight. Six tentacles, four Stranglers and eight Void Spiders. A well placed stick of dynamite took care of six monsters but a blood spatter summoned four more Stranglers. As we ran out of minis all Stranglers became Elite with snapping jaws!! Manic!!
We were both KO'd and lost the mission. Great fun though devil
