Hi
Can you play this game with one person controlling two heroes, is it
difficult or easy?

So in a two player game you would have one person controlling Mordak as the bad guy, and one person controlling a hero of their choice as the good guy. You do not need to control two heroes.

Regarding how difficult it would be if you did choose to control multiple heroes, it is easy enough! Especially if you choose a spellcaster and a non-caster combo (so you aren't managing 2 spell-hands at once)!
