I like Pick Up and Deliver or network building games because I like at the setup for that game and seeing what the best routes would be. I already own Cinque Terre, which might be my favorite of the genre, but I am looking for another one where part of the board/trade locations are not set at the start of the game.

As far as the obvious choices, I used to own Merchant of Venus and liked it a lot, but I ended up selling it after about 15 plays. I do own Xia: Legends of a Drift System, bur rarely get to play it, so I am looking for other options.

Check out Firefly: The Game. Beast of a pick up and deliver game. (although the theme may not be for you)

Board is completely revealed at the beginning but you need to travel to planets/areas and explore them in order to see what items/events, cargo/passengers are available to equip/pick up/deliver.

(there is no 'network building', as i understand it, in this one)

Hey, good suggestion. I played it once, and while I thought it was fun, it felt a little slow for something I would own.

Agreed. Definitely too long for my taste as well but it seemed like it may fit your criteria

504 has a pick-up-and-deliver module, an exploration module, and a road-building module; they can be combined in 6 different ways (depending on which is used for victory criteria, which for income generation, and which for added flavor).

Unfortunately, many of the games in this genre have a really large footprint and are a bit cumberson (Merchant of Venus, Xia, Wasteland Express). Makes them hard to get played.

That's another great suggestion. I've always toyed with trying 504 out.

The newest one will play 4 with 2 boxes, but would not recommend.

Explorers of the North Sea is a good pick up and deliver game. It’s quite similar to Akrotiri but you also have enemy ships and there is more player interaction.

Akrotiri has an interesting market mechanism whereby you can get different prices for you commodities depending on how scarce they are at the time. There is more emphasis on tile laying as you have to work out shipping routes, whether there’s a jetty you can access, can you portage and how you can achieve your maps.

Explorers has a set collection element to it and each player has a special bonus. It has an expansion that meant to be good although I’ve never tried it. They are both great games.

Explorers is a fine game, but I think of it more as a tile laying, as the Pick Up and Deliver is pretty weak (you can't really make a "trade route" in the game as your boat moves too slow).

It is indeed a fine game.

You're quite right on the trade routes though. blush

Pandemic Legacy: Season 2
Istanbul - although weak on the exploration part

Does M&M have any exploration? I don't seem to remember it having any.

FD and Wildcatters are not Pick up and Deliver games.

In Wildcatters you're producing and transporting oil for refinement which, in turn, converts to points - not unlike M&M. The BGG listing gives pick-up and deliver as one of its mechanisms.

M&M doesn't have exploration in which you're venturing out to the unknown. You may also interested in Serenissima (second edition) though it doesn't have the variable setup (and exploration) you're looking for. Empires of the Void II has a variable planet set up and some have compared it to a blend of Merchants of Venus and Firefly.
