I'm not sure if you want a complex game or lighter games but these are all good games:

Pitchcar - Finger flicking fun.
Wits & Wagers - Trivia
Diamant - fun and light push-your-luck style game
Category 5 = light card game that plays with 8
Time's Up - great party game

Citadels also plays with 8 players with the Dark City Expansion... I've never played with 8 though so I can't say for certain if it would be good playing with that many.

All the good stuff has been mentioned already but I'll also toss in Oriente. I've personally never been able to make it through the rules without a headache though.

Roborally is alot of fun if you like alot of chaos and player interaction...but it is in the top 100...not sure if you're looking for recommendations from those top 100 or below

Either Apples to Apples or Cineplexity, both from Out of the Box Publishing. Apples to Apples is all around good fun, but Cineplexity is only good if all of the people in the group have comparable film knowledge (access to IMDB doesn't hurt either).

My suggestions for games that play up to 8 are:

Saboteur - a good game that plays with up to 10. Altogether good fun.

BANG! - with the BANG! Dodge City expansion this game can play with up to 8. It is good fun, another card game (like Saboteur above). This game has player elimination - although it is fun enough that watching is amusing too.

Diamant - is an excellent 'push-your-luck' game for up to 8. Very fun and funny!

PitchCar - an excellent dexterity game for up to 8.

Duel of Ages Set 1: Worldspanner - can be played with 8 people on two teams of 4. This is probably the limit in my book, but this is certainly an excellent and very amusing game - although very different from any others on the list thus far!

Battlestations - an adventure game that takes a GM, but very good nonetheless - and very fun if you are into adventures and sci-fi!

Citadels - with the Citadels: The Dark City expansion (the new edition comes with it in the box), can be played as an 8 player game. I prefer it with less personally, but there are plenty here who enjoy Citadels as a 'big game'!!

RoboRally - a very amusing programming game for up to 8. This one is especially fun with a timer - which makes everyone work that much harder and means the game is a riot!

Formula Dé - is an excellent dice based racing game where luck and skill make a nice mix.

Although Shadows over Camelot was designed for up to 7 players, it can play with 8 if you can get the Sir Bedivere figure & coat of arms...

I would say many games that play with 8 are intolerable with that number; typically (though not always) the only games that maintain a decent pace and don't drag with 8 are party games.
Of party games, Attribute is by far my favourite, and every player is highly involved at every turn. The Castle of the Devil is brilliant with 6-8, and also moves at an excellent clip.

Nuclear War/Escalation/Proliferation - still a fast and fun game even with 8 players.

Wiz-War - I love chaos, and an 8-player game of Wiz-War would be the ultimate in chaos. Realistically, the game takes too long if you have even one person with Analysis Paralysis problems, regardless of how many players, but even with fast players, 8 might be a little too much downtime.

Kill Doctor Lucky - this becomes a much longer game with 8 players. Expect to go through the deck twice, even though the failure cards are left out of the re-shuffled deck. It's probably a little too long with 8 players, but you could speed it up by pulling some failure cards out of the deck before shuffling.

Deadwood - this Cheapass game is just moderately fun, so an 8-player game would probably be too long. Adjust the length of the game by reducing the number of turns and it will be okay.
