Alright I got this in an e-mail today and I am already annoyed! How the hell does it work? Stupid Gopher getting the better of me, I would expect that from other rodents like Rattus Rattus, but not a little gopher!

Spoiler (click to reveal)
A two-digit number can be represented as 10*x + y. When you subtract the sum of the digits, you are left with (10*x+y) - (x+y), or 9*x. Therefore, no matter what you choose, you will end with a multiple of 9. If you look at the chart, all multiples of 9 are given the same symbol, which is the one the gopher reveals.

Oooh he is a tricksy one because he changes the symbol for them each time to make ya think it isn't running on that principle. Well if I ever have to outwit a gopher in a battle I want you on my side Dave.

Bah, go ahead and be all "logical" and "smart" - I say it's witchcraft.

edit: excellent use of flummoxed in a thread title BTW. Well done, that.

I tried it a few times and I thought it was wrong the second time, but then I realized I subtracted incorrectly.
