In Gatineau:
Jeux Triboulet (www.jeux-triboulet.com) This one has a great selection of French editions of games
Multi-Zone - In Aylmer and at the Promenades de l'Outaouais.

Those are the main 2 I go to (actually, mostly Triboulet, as they have game nights on Fridays, but the last Friday of the month, it's located at Le Centre communautaire Le Baron.

IMHO, the 'big 3' are:

Mondes et Merveilles (Gatineau)
-Best selection of 'eurogames'.
-A lot of space dedicated to French-language editions
-Some used games for sale at reduced prices

Fandom II (downtown)
-Best selection of wargames, RPGs, miniatures, solid selection of euros.
-offers 10% discount to cardholding members of local game clubs

The Comic Book Shoppe (Clyde @ Merivale)
-Solid selection, though badly disorganized. Probably best selection of 'Ameritrash'.
-Occasionally, great deals (bought 2 copies of Betrayal at House on the Hill here for $24.95 each)

I'd put
"Toys on Fire" (Barrhaven)
-Decent selection, *very* well organized.
-Lots of space devoted to children's/educational games and licensed games (IE, Christmas-gift games)

and
"The Strategy Game Store" (downtown)
-Chess, and lots of it
-More French-language editions than any other store this side of the Ottawa River.

on a tier below these three - in large part due to their prices usually being 10-20% higher than the others.

The comic book shoppe on Bank street also carries board games (and miniature games etc). The selection isn't as big, but they are competitively priced and they can order in almost anything. They are also *much* better organized then either the Clyde store or (IMO) Fandom II

The Comic Book Shoppe on Clyde also has a very large selection of wargames (for Ottawa) including Columbia Games and Hex and Counter Games, however, you'll need to ask the staff (ask for either Mike or Ryan) for a complete inventory as they can't keep it all on the floor.
