We added a rule. After each player is finished with their turn, the opposing player uses their finger to tip the board down all their way (opposite the way the player who just moved would like) and then removes their finger. If the board tips back to the player who just moved or goes back to neutral after removing the finger, it's still that player's turn. That way, it's a true test of balance. We've noticed that sometimes you play a piece and the board stays neutral, then some other random event happens and causes the board to tip away from the player who just played. So we added this "do you really wanna tip? Do ya?" test.

And since I got a level, we always check that we're pretty close to flat before playing. Obviously recommended.

Gosh I'd say we do the opposite. After you turn, if it feels like it might tip away, part of the skill of playing is removing your finger REALLY gently in the hope that you might get lucky and have it stay in your favour.
