Probably the simplest way is Media Player that comes with Windows. You can rip Cds into MP3s pretty quickly, but you have to change a setting in preferences or it will rip in the WMA format.

Now if you don't use Windows....

I've been very happy with dbPoweramp. http://www.dbpoweramp.com/
I've used it for years.
There used to be a free version, but I'm not sure it's free anymore. I paid for it long ago, worth every penny.

I like MediaMonkey for organizing my files and cleaning up the tags (including adding cover art). http://www.mediamonkey.com/
The free version rips CDs at only 4X speed. If you purchase the gold version, you'll get fast ripping, and I would then skip dbpoweramp.

Plain old Windows Media Player 11 to Rip CDs straight to MP3.

I seem to remember some of the earlier WMP's only ripped to WMA.
