You've sent your Offensive Air Support for regular combat in a hex. The enemy sends his Defensive Air Support. There is an air battle, then the ground battle.

THEN, in the Exploit Phase, you attack that hex again - over which your two TAC units are still flying.

Do they run through another round of air-to-air combat, or do they skip straight to the OAS and DAS?

You follow the steps of the combat phase from the start, which starts with the air battle from my recollection. (Also check for supply for this new combat.) And, the attacker can send in more unused TAC, drop paratroops, and the defender could commit more uncommitted DAS in range.
