Where, pray tell, are the egg rolls (both vegetarian and not) and Spring Rolls? After all, that's the reason to go to most Chinese food places.

It is unfortunate but I have found that there is a significant variation from one restaurant to another. A dish that I enjoy in one will not even taste remotely similar in another. I don't think that it is just that one set of chefs is better than another, but rather it seems that the recipes don't have consistent definitions.

Agreed. Nowhere do I see the sausages and rendered duck fat steamed over rice, or the shrimp drowned in pecans and condensed milk.

If you ever make it to western Mass check out Amherst Chinese... It is mostly authentic (they still do have the usual poo-poo platter stuff on the menu for the greasy folk) and they have their own local organic farm...
