ZiMP is perfect for this!!! If you don't like Zombies zombie play the Airborne in my Pocket variation. It's a little more in depth and exceedingly well done.

Also, my wife and I always play Cribbage. That way, you also have a deck of cards to play solitaire when she falls asleep on your shoulder

My wife and I usually take Ingenious: Travel Edition with us. As long as you can handle the scoring pegs, it's a perfect game for plane flights. Fits easily on an airline table.

My wife and I recently played Lost Cities without much difficulty across two fold-down trays in coach on several flights.

A simple-to-learn yet somewhat-strategic regular-deck card game for two = German Whist. A bit more complicated, but also more strategic = WYSIWYG (also regular deck).

I've also been meaning to try Watten. It's probably not as hard to learn as it looks at first; the Tyrolean version looks simplest.

For non-regular deck games, you could consider Biblios; it requires minimal table space.

Lost Cities card game works well. My wife likes that one.
Cribbage is good with a standard deck of cards and pen & paper to score.
Hive plays well and takes up very little space.
If your better half likes war games Manuoeuvre could fit the bill. Should fit on one of those little trays. Width would be okay but depth may be on the edge. Very easy to play.

It's not a board or card game, but we pass many hours in car trips by playing a non-sucky 20-questions variant called [url=http://en.wikipedia.org/wiki/Botticelli_(game)]Botticelli[/url]. (We tend to play only 1 direct question at a time.)

i wanted to be funny and saw TWILIGHT IMPERIUM 3rd Edition, but will refrain...

Travel Blokus can kind of be played solo and obviously will work with two.

Hive will kind of work on a plane as will NHL ICE BREAKERS if u like hockey.

Travel Blokus is perfect for airline travel. My wife and I have uesd it on several occasions. With two adjacent tray tables lowered, the sturdy plastic board rests on both, leaving room on each table for a box cover to keep the assorted tiles in.

Wiz War might work. Card pile is kind of large, but you could break it up into small piles. No solo for wiz war though.

I give Hive a fourth vote. If you and your partner are well matched, games can be quite tricky to win. Plus for me it has that "I'll give it one more go" feeling.
