Here is a suggested betting variant for the racecourse part of the game.

All Black horses have starting odds of 5/1.
All Red horses have starting odds of 10/1.
All Yellow horses have starting odds at 15/1.
All Blue horses have starting odds at 20/1.

For each advantage card a horse possesses, reduce the starting odds by 1.
For each disadvantage card a horse possesses, increases the starting odds by 1.
No horse can ever have its odds reduced below evens.

Examples:
Dark Warrior is a Black Horse with 2 advantage cards and 1 disadvantage cards.
As a Black horse its starting odds are 5/1.
The 2 advantage cards reduce its odds by 2 to 3/1, but the disadvantage card increases the odds by 1 to give final odds of 4/1.

Overcoat is a Red horse with 4 advantage cards and 0 disadvantage cards,
As a Red horse its starting odds are 10/1.
The 4 advantage cards reduce its odds by 4 to give final odds of 6/1.

Knight Error is a Yellow horse with 0 advantage cards and 3 disadvantage cards,
As a Yellow horse its starting odds are 15/1.
The 3 disadvantage cards increase its odds by 3 to final odds of 18/1.

King Of Clubs is a Blue horse with 2 advantage cards and 2 disadvantage cards,
As a Blue horse its starting odds are 20/1.
The 2 advantage cards reduce its odds by 2 to 18/1, but the 2 disadvantage cards increase the odds back to final odds of 20/1.

PAYOUT
For 1st place, the bank will pay out the initial fee staked plus 100% of the winning odds.
For 2nd place, the bank will pay out the initial fee staked plus 50% of the winning odds.
For 3rd place, the bank will pay out the initial fee staked plus 33% of the winning odds.

Example:
Dark Warrior comes in 1st place at odds of 4/1.
Nick bet £10 on Dark Warrior.
Nick get his initial stake of £10 back, plus 100% of the winning odds (£10 at 4/1 = £40).

Overcoat comes in 2nd place at odds of 6/1.
James bet £10 on Overcoat.
James gets his initial stake of £10 back, plus 50% of the winning odds (£10 at 6/1 = £60, 50% of £60 = £30).

Knight Error comes in 3rd place at odds of 18/1.
Claire bet £10 on Knight Error.
Claire gets her initial stake of £10 back, plus 33% of the winning odds (£10 at 18/1 = £180, 33% of £180 = £60).

This makes the game more realistic and can change the outcome of the game - remember, the winner is the player with the most money at the end of the game!

I like the idea, but the odds don't line up very well with the actual advantages the various color horses have in the game.

I calculated out the total number of spaces on the board, how many are of each of the four colors, and factored in the relative advantages each color has if a horse were to land on its own color space. Black horses have about 1/6th of the total number of spaces, red about 1/8th. yellow 1/10th, and blue 1/12th. Black horses get about an 8% bonus in spaces, red 6%, yellow 4% and blue a little over 2%.

With this in mind, I came up withe the following chart to help handicap the horses for a race. In this variant, each horse needs to keep their own color and white cards earned during the training phase, rather than have them go into a general pool for each player.
