Some I can guess:

The Nutcracker is shaped like a nutcracker.
Treemendous has lots of trees.
Bruce's Nightmare is a difficult track.

But what about the others?

The Hobbit's Breakfast: has a double bend and hobbits have two breakfasts?
Yquem Inspired: no idea.
The Riddler: shaped like a question mark (sort of)?
Dagger of the Mountain Troll: doesn't really look like a dagger.

Any thoughts?

I think Yquem is a reference to wine (Chateau D'Yquem).

Almost has to be inspired by the most excellent Sauternes wine, Château d'Yquem. How it is related, though, after looking at the board, I do not know.

After my wife pointed out to me that the Hobbit's Breakfast looks like intestines, it occurred to me that that snow drift on the track might be the partially digested "breakfast". I'll never look at that track the same way again.
